INGREDIENTS:

2 tablespoons coconut oil
1 cup snow peas
1 red pepper, sliced
½ cup sliced mushrooms
½ cup chopped purple cabbage
½ cup chopped green cabbage
1 cup broccoli florets
1 cup cooked chicken
1 cup Thai chili sauce
1 cup canned coconut milk
DIRECTIONS:

Heat a large skillet over medium high heat until hot (about 4 or 5 minutes). Add in coconut oil and vegetables.
Fry for 5 minutes over medium heat, stirring often.
Add chicken, Thai chili sauce and coconut milk, and continue to cook, stirring often, for 8–10 minutes, until vegetables are cooked and lightly tender.

Quinoa Porridge Recipe

INGREDIENTS:
• 1/2 cup, Quinoa
• 1/4 tsp. Cinnamon
• 1 1/2 cup, coconut milk
• 1/2 cup, Water
• 2 Tbsp. honey
• 1 tsp. Vanilla Extract
• Pinch of Sea Salt

DIRECTIONS:
1. Heat a saucepan over medium heat. Add quinoa, season with cinnamon and cook until toasted, stirring frequently, about 3 minutes.
2. Add almond milk, water, vanilla, honey and sea salt. Bring to a boil, then reduce heat and cook until porridge is thick and grains are tender, about 25 minutes.
3. Add more water if needed. Stir occasionally, especially at the end, to prevent burning.

DAIRY-FREE YOGURT #3: RASPBERRY & ALMOND YOGURT

Add to pot:
4 cups cashew milk
2 cups water that has been blended with 1 tbsp almond butter
1 tbsp honey or coconut sugar
1/8 to 1/4 tsp chocolate raspberry liquid stevia (to your taste)
Bring to simmer. Watch carefully so it doesn’t boil over.

Cashew Yogurt

INGREDIENTS:

2 cups cashews (soaked overnight)
1 1/4 cups purified water
1/2 cup mixed berries

PROCEDURE:

Start by soaking your nuts the night before you plan on preparing your yogurt. Simply put the nuts in a mason jar, fill with water and place in the refrigerator overnight. In the morning, remove the nuts from the refrigerator and drain.

Place the nuts, along with the purified water, into a high powered blender (add more water as needed) and blend until it makes a nice and smooth mixture.
Empty the contents of the blender into a milking bag. Began squeezing the liquid from the bag into a bowl.

Raw, Vegan Breakfast Pudding

4 cups cashew milk

1 banana (ripe works best)

1/2 cup raw flaked oats

1/2 cup chia seeds

3 cups fresh fruit (I used strawberries, blueberries and raspberries)
